- Rubin Carter (born December 12, 1952) is a former American football player and coach.
- He most recently served as defensive line coach for Purdue University.
- Carter played professionally as a defensive tackle in the National Football League (NFL) with the Denver Broncos from 1975 to 1986 Carter was the head coach of the Florida A&M Rattlers football team from 2005 to 2007.
- Carter has been the defensive line coach at the University of New Mexico under head coach Mike Locksley.
- Carter graduated from Fort Lauderdale's Stranahan High School in 1971.
